I know that it seems I’m only adding recipes that have lots of sugar, but there’s a reason for that. I like recipes loaded with sugar. It doesn’t help that I’m still horribly depressed over the election, and Christmas is just around the corner…
Mix 1/2 cup melted butter with 2 cups of packed brown sugar. After all the sugar is dissolved, stir in 2 eggs, 1 teaspoon vanilla, 2 teaspoons of baking powder, and a sprinkle of salt. Then add 2 cups of all-purpose flour. It’s a bugger to stir it all together, but it’s totally worth it. This is a really sweet but quite delicious recipe. Lastly, add 1 cup of shredded coconut. Press into a greased 9 x 13-inch pan. The batter’s pretty thick. Bake at 350 degrees for about 25 minutes. Cut into bars. Be sure not to overbake. It’s really easy to dry out these brownies. They should turn out moist (but not underdone either). It’s a fine balance.
